Shallow frying
Place a small amount of oil or butter in a pan then dry and flour the fish. Fry the fish at a medium heat until cooked to your liking.
Baking
Using a sharp knife, make shallow cuts along the top of the fish. Put into a greased dish, flavour with ingredients such as olive oil and fresh herbs and cover with foil. Bake at around 180°C.
Poaching
Place a piece of fish into simmering stock. Whole fish should be placed in a pan of cold stock, which is slowly brought to a gentle simmer. Simmer until cooked through or to your liking.
Char-Grilling
To help the heat penetrate the flesh, cut slashes into whole fish and then put fish on a preheated grill.
Steaming
Place fish in a steamer or on a plate over a saucepan containing gently boiling water. Cover until cooked.
